Victoria:

Victoria is a one of the most important wine producing regions in Australia. The wine industry was jump started by the discovery of gold in the area, but as the gold ran out the area would rely more on the wine as a source of revenue. Victoria is the smallest and southernmost region in Australia excluding Tasmania. Near the coast (Yarra Valley) the climate is cooler where Victoria is known for Pinot Noir and Chardonnay. As you move further in land, the sun beats down creating better conditions for Victoria's Shiraz and Cabernet Sauvignon. In the Northeast corner of Victoria are grown enticingly sweet Muscat and Tokays, which are a specialty to Victoria.

Veneto:

Veneto is a DOC in north east Italy stretching westward to Lake Garda and northward to the Alps and the Austrian border. It exists behind the lagoons of Venice, which was an important power in the wine trade of the middle ages. Native vines of Tocai, Garganega, and Verduzzo are grown in the hillsides scattered about the region. Bardolino, Valpolicella, and Soave can be great if grown in the right area. The hills running eastward from Lake Garda are one these places. The most interesting wines to come from Veneto are the light, fruity merlot and Cabernet Sauvignon. Because Veneto's main center of academe is the Experimental Viticultural Institute of Conegliano, it seems fitting that currently Veneto is the site of the nation’s most important wine fair, "Vinitaly", held each spring in Verona.

Chicken and Blue Cheese Wrap

Ingredients

1/4 cup chopped walnuts
1 tsp olive oil
¾ lb boneless skinless chicken breast, cut into 1" cubes
½ teaspoon kosher salt
½ teaspoon pepper
1/4 cup blue cheese dressing
1/3 cup dried cherries
1/4 cup finely chopped celery
2 tablespoons bleu cheese, crumbled
1/2 cup firmly packed chopped arugula
2 whole Flour tortillas, 12 inch

Preparation

Preheat oven to 350°F.

Spread the walnuts on a baking sheet. Bake until they become aromatic and appear shiny from the oils being released, about 10 minutes. Remove from the oven and let cool.

Heat the olive oil in a large nonstick skillet over high heat. Add the chicken. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon pepper. Cook until cooked through, 3 to 5 minutes, stirring to brown all sides. Let cool.

Mix together the Roquefort cheese, blue cheese dressing, cherries, and celery. Add the chicken. At this point, the filling can be refrigerated and finished later, if desired.

Toss the arugula and walnuts into the chicken mixture. Divide among the tortillas and wrap .
